fix: vendor vnctalk-prosody source as regular files (was a submodule gitlink)

The repo tracked vnctalk-prosody/ as a submodule gitlink with no .gitmodules
URL, so the CI checkout left it empty and kaniko could not find the Dockerfile.
Vendor the source in-tree so the Gitea Actions build has a self-contained
context.
